Time for another selection of random shots from the past week…..
One of my head chef’s in action, the halogen heat lamps which keep the food hot whilst being served do little for aiding good photography. The hotplate is the main area of the kitchen, the place where the chef calls the shots….

Spiders have been out in full force recently, I caught this fellow spinning a web in my garden….

I was struck be the half moon over the fens close to where I live and the colour of the sky. Many photographers will alter their photographs to the extent that it bears little resemblance to the original, I want to show how I see my surroundings in their natural state, I love the egg like quality of the moon on this…

Gull over Nocton Fen
A shot from last night’s dinner service, a partridge which had been roasted and deboned ready for serving. The pool of butter keeps the meat moist whilst the rest of the dish is assembled…

I really like this idea - I like the moon shot - good detail.
I also like cheese but that’s another story

Another great set of photos. Your head chef looks so calm! The photo of the cheese has captured its creaminess beautifully. The moon reminds me of an omlette as it seems to show a fold.

The cheese looks so good . . . oh, man! I can just feel it melting in my mouth as I enjoy that sour tang . . .
The other thing I noticed is your head chef looks far too young to be in command of a professional kitchen. But then I realize that I am growing older. . .

It sounds a bit perverse but I do really like the halogen pass photos. There’s a real dramatic element in the shots, though it’s got to be a total head-scratcher in terms of white balance.
My God, that Cumbrian blue looks good!

It’s very frustrating, I am in the middle of service too so it can only ever be snapshots. I only put them on here for visitors to see inside a kitchen, 99% of the kitchens rule out the possibility of a good shot because of the lighting.

Miles,
Now that you have all the responsibility of over-seeing a number of fine eating establishments, how do you feel about being back in the kitchen? Would you miss it if the job was all paperwork and travel?
After a few months away from my own kitchen, I’m finding things don’t flow in quite the same way as they did before….. in part due to learning how to use different appliances but my lack of practice is showing.

It’s only a matter of time before the roast ends up in the dish washer
I’ve already inadvertently washed the instruction booklet in the dish washer….. that filter better be made of kryptonite (judging by the cost anyway
).

Good question. Mostly it’s a good balance of the two but much depends on the longevity of the staff as to how much time I spend ‘in’ or ‘out’…..right now it’s about 95% in!!

Stunning photos, Miles! I just can’t believe your wildlife shots.
I love these collections. The close-up of the spider is especially interesting to me as I actually took a whole course in spider biology at one time. Amazing little critters with some quite remarkable love-making skills. But in some cases (not always, by any means), the poor male ends up under the warming lamps.
I sound like a recording, but you need to publish a book! These are amazing!

Thanks, these are the ‘off-cuts’. Spider biology? That’s sounds very interesting. Can’t say I’ve ever thought about a spider’s sex life but each to their own
