Stuck in the kitchen!

A busy old week for sure. A hotel reopening with new equipment, menus, staff and the inevitable problems which go along with it. Still we’re up and running and I’ll be leaving them to it to concentrate on other projects. Here’s a few pics from the week. It’s 4.15pm and I’m off to bed for an hour before dinner service.

    That’s a sneaky trick putting grease-proof paper under the caramelized apples…. I’ll remember that next time I attempt a tart tatin because mine always seem to stick to the pan.

    Good luck with it all Miles, must be a hectic life sometimes. Time to unwind and take a little herbal tea perhaps?

    It’s a good tip, just smear some caramel on the paper and let it set,then place your apples around.
    I made time for a herbal tea last night…at 11.30 when I finished work :(

    I don’t know how you do it. Keeping up that pace of yours and still providing us with wonderful blog posts. As you know, I love these photo series of yours. It gives me (all the way over here in snowy Colorado) a peek into life in a British kitchen. I use parchment paper in my baking as well. Makes things much easier. I hate to think how you chefs must cringe when you see my meal request come across your order screen. No gluten, no gluten, no gluten. Well, whatever you say under your breath, I love you for helping me enjoy my meal and not get sick. I’m not kidding, I appreciate that so much. When the waitstaff and the chef care enough to put together something that is safe for me to eat, I’m a loyal fan for life.

    By the way, it really is snowing here. I woke up to about 2 inches in my yard. I went skiing last weekend. It was great! Wow, can’t believe it’s May.

    I’d say 95% of my menus are gluten free so it’s no problem for me :)
