					<description>In my twenties I worked at a ski lodge right on the mountain in Taos Ski Valley, New Mexico. It was owned and run by a French ex-national ski team member and his chef (chef Claude, Anne and Cid, remember him from an old post of mine). Claude used to make the most bizarre omelletes similar to this one of chef Thomas'. I remember Claude making an omelette for the staff early one morning that had French fries embedded in it. Old French fries. One of the young men (snow shoveler, fire maker, luggage hauler, etc.) yelled into the kitchen about how weird the omellete was and -- oh my gosh, that charming French chef came totally unglued. I can still recall the sound of pots flying and French cuss words! 

Very clever post, Miles. I love your "conversation" with the moaners. And the girls. You're so right though. I work with clients who can't seem to figure out how they've gained so much weight. It can't be the 4 donuts and 3 lattes for breakfast. Or the 2 candy bars before lunch. Or the 4 margaritas after work. Or, like you said, the lack of exercise.

That's one hell of an omelette... not sure I've ever seen anything quite like it.  How many chefs portions is he holding?  In my terms that should feed about 25!  How kind of Thomas to smile for the camera, he looks very relaxed while holding what can only be described as ostrich egg surprise :)

I've spent a while this afternoon lecturing my father on the finer points of macaron making and how they differ from macaroons.  I lost him somewhere between 'the foot' and 'flowing like magma' but he scoffed one and said he liked it because it tasted good and I'd made it for him.  That's always been the way of things in my family, it's useless blinding them with science.

Good food and free... someone else cooking it for you... sounds like a dream to me.
