Quick and Easy Kedgeree

How to make a great rice dish…

Kedgeree is one of my all time favourite rice dishes, variations abound of course but for me it’s not much more than smoked haddock, rice, egg and curry for seasoning.

This was traditionally served as a breakfast dish, other smoked fish such as mackerel, kippers and salmon have found their way into various recipes and there’s nothing wrong with that, you can treat it as a paella of sorts using up different ingredients in your refrigerator.

This serves about four:

500g smoked haddock gently poached, cooled and flaked into large pieces. About 500ml or so of the stock from the cooked fish.  One large white onion finely chopped.  200g Washed Basmati Rice.  1 teaspoon of mild curry powder or more to taste.  2 tablespoons double cream.  40g butter.  4 hard boiled eggs shelled and cut into quaters.  Chopped parsley.

Heat some oil in a large frying pan and gently cook the onion without colour. Heat the fish stock in a seperate pan. Add the rice to the onion and stir well, lower the heat and sprinkle over the curry powder, mix well. Add the stock and stir through, bring to the boil and then simmer for about ten minutes or until cooked. Stir in the butter and cream, add a pinch of ground white pepper and a little less of nutmeg or mace. Add the fish and gently fold through the rice followed by the parsley and then the egg.

This dish goes back to the Victorian age, it was common to serve it with a chutney such as mango but I really cannot see the benefit of that. If you like it then go for it!
