					<description>I worked with Peter at the Intercontinental Hotel Park Lane, in the 80's and 90's, first with him while in the Food stores and then as the Payroll manager.

I only just found out about his passing (to sleep) last month (May 2011). I now live in Jamaica and since finding out I have been trying to find out as much information about him as possible.

We had many happy memories together. He will be fondly missed. My heart goes out to Nicole and the boys.

It is my prayer that when the trumpet sounds and Jesus bursts through the skies that we will all meet up again in the clouds.
Until that time may his soul rest in peace.

					<description>I never worked with Peter but we were good friends in the 60tees in Bangkok, he was with the Siam Inter-Continental opening team,I was at the Hilton.There were only a few international hotels but we all spend a lot of time together, helped each other in whatever we were doing like being one team.Peter was always part of it.
He was a great guy and a Gentleman.</description>

He was a true gentleman, a delight to work with and, unusually, not just an excellent chef but an excellent manager too. I was enormously fond of him and I am very sad to hear that he had such a short retirment. My sympathies to Nicole and his sons. I have fond memories of gatherings in the chef's office. Welcome to the blog and thankyou for a great comment. This is the reason behind my post, it shows how a man like him is still remembered from all of those years ago.
I too remember being shown how to make an omlette by my first Head Chef. It was a fundamental part of learning to cook, it had to be perfect, slightly undercooked, no marks from the pan and perfectly seasoned. Chefs used to use that as a test during an interview. Nobody does that anymore.
