Keep it in the Family

A one stop shop at the Collins supermarket!….

One of my favourite lunches has to be a simple omelette and salad. It’s light, easily digested, healthy and quick to make. Now there are countless variations out there and I’m sure you all have your own favourites but I don’t. I put near enough anything in mine, whatever I can get my hands on in fact and that bode well for yesterday’s lunch courtesy of my family…

My brother had kindly donated a fine specimen of a courgette earlier in the week, grown in his very own kitchen garden. No way was I going to waste this as a freebie from my brother should be treated at once with both joy and suspicion :mrgreen:
My mother, the good Mrs C. also gave me a bag of fine looking cherry tomatoes, once again home grown in her own vegetable corner of her garden and you don’t need telling how well courgettes and tomatoes go together.

I supplied the heat, a freshly picked home grown chilli from my greenhouse along with a snippet of fresh savory went into the pan along with a home grown shallot or three. A pinch of salt donated by the Maldon Sea Salt Company of England and a turn of not so freshly picked Indian peppercorns went into a bowl of free range golden eggs and all was added to my pan of goodness thanks to my green fingered family.

    Miles,

    I didn’t even have the strength to make a frittata tonight due to heavy bouts of cement mixing…. if this is what being a man is all about then I’m off back to the kitchen sink, or I would if I had one :) One more vat of cement and I reckon I’d turn into one of those Chinese ceramic warriors minus the good looks…. so it is with some relish I gaze upon the Collins homegrown frittata and make a mental note to cook one up on my 1950’s electric single ring, outdoor hob sensation. I’m expecting a Wolf any day now I might add :)

    I’m on them daily :)
    I hope it didn’t give you stomach ache or that you choked on it :twisted:

    I’ve got onions, borlotti beans, swede, turnip, carrots, kale, brocolli, yellow beans, french beans, shallots, spring onions, leeks, beetroot, tomatoes, sprouts, sweetcorn, chard and aubergine all there or on the way - is there a meal in that :)

    I made a mixed squash frittata the other night, just to unload some of the various summer squash I had and it was delicious. I made it in a skillet and added some cornmeal to the mix — I love this kind of thing.

    What is a hob? GDave mentioned it in his last post and I see Cid hob-talking as well.

    Also, what are those little mahogany-colored things that look like rice?

    Gosh, this looks so good and it’s dinner time over here!

    That sounds nice, healthy and delicious! A ‘hob’ is the ‘top’ of the stove which you stick your pans on when cooking, be it gas or electric.
    The mahogany thingys are pommegranate seeds for a little crunch.
