Evolution in chocolate….
Yesterday I visited my head chef in Cumbria, a young man who has worked for me for over eight years. I wanted to photograph some dishes for promotional purposes as well as go through some of his new dishes.
So here’s his version of chocolate mousse, visually appealling and gastronomically very well balanced. For me personally it is a sign of his progress and coming of age. As a dish it reminds me of how I gradually matured as a chef and it is nice to see him following the same process.
Whilst I can guide him and others there has to be a degree of self evolution as a chef. I am a realist, ultimately all any customer wants is a decent meal for their money so I am not one to expect sympathy or understanding for what the guys in whites are going through in the kitchen. Rather I hope that as a result of taking this journey a customer will read a menu and appreciate it’s content for what it is and enjoys a memorable meal leaving this sentimental old bugger to drive back down the motorway with a head full of memories and hope for the future.
