It’s a Winner!
I’ve not made a hash of this one!
Remember my post on corn beef hash? Well I must confess I had some reservations about putting it on one of the menus but then I thought it might well suit the locality of this particular hotel. Well, I hate to say it but I will, I was right! The first thing to sell off the menu was the hash and I was pretty chuffed (slang for pleased) We serve it with nothing more than a pot of good ketchup and those who pick it seem to really appreciate seeing it on a menu.
It’s more than that though, on a personal level it’s nice to have the freedom to break away from gastronomy once in a while, food awards are great and I wouldn’t want to give up cooking food at that level but it does have its restrictions and now I have other restaurants of varying styles, pricing structures and, er, countries to look after I have more freedom of expression.
I’ve said it before but in my younger Head Chef days I was hell bent on presentation but now I am older I am more comfortable with my food style and feel confident in what I do, so this plate of corn beef hash is my way of saying it might not win a michelin star but then I don’t care. I just know it tastes good and if it works in that particular hotel then great.
I still like my ‘fancy stuff’ though!!

Thta meal look delicious to me and only a food snob would turn his nose up at it.
I think you are also pushing the envelope as well - great stuff !
The only downside is - I didn’t get to try it

May I also add: well done for proving this point. It takes some guts to put this on a restaurant menu. I have heard many a people say that they like basic food and what they can relate to.
I guess it is like with many things, know your area and customers whom you wish to serve. Posh frocks will not sell everywhere, basic and good clothes will.

Chuffed? I just love you Brits. And I love this post! Good for you for covering all the bases. Sometimes simple is best, sometimes fancy is best. Good old “gourmet” hash is the perfect comfort food. This looks delicious.

Canny lass? I don’t know that I’ve ever been called a canny lass.
I made some hash after reading your post. A bit different from yours, but I did put 2 poached eggs on top. And a chipotle pepper mixed in with potatoes, ham, and beans (along with a few other random ingredients). Thanks for the idea, it was good.
I also made reference to you in a post I did a few days ago. Funny — here you are mentioned on a blog post way out here in the wild west.

Not many do get called it! Nice one on the hash, what’s great is that you’ve proved there are countless possibilities. Food thrift for the global crisis!
