Welcome to the site. I would let them get a bit established in three inch pots now, bring them outside during the day to get used to the temperature change and bring them in at night if there's chance of a frost.
As to the vinegar, it's always best to boil, it helps infuse the spices.

Welcome to the site. That's a shame, sorry to hear that. Personally I'd get rid of them Brad, it's not worth the risk of upsetting your stomach. This has happened to me before when I have preserved onions, the jars must be ultra clean and kept somewhere dark and cool.

					<description>Hi. Just wanted to say thank you for your great recipe. I found it 3 weeks ago after finding fresh beet root for sale in our local grocery store. We currently live in Singapore and the imported jars of beet root from Germany are not as spicy as the ones we used to buy in Norway. I had to adapt your recipe a little because of what is and isn't available here. I used fresh lime leaves instead of bay leaves; fresh red chillis (including seeds) instead of dried chillis and finally threw in a couple of garlic cloves for good luck! We tried the finished product two days ago and it was fabulous! I went straight out and bought a lot more beet root whilst it's still in season (imported from Malaysia) and I'm making a large batch today. i think I will add a little sugar this time as I found the after taste a little acidic last time - maybe I ate too much of it! Thanks again.......</description>
