Making the most of your coriander plant…
This year I have grown two herbs especially for their seeds; coriander/cilantro and green fennel. Quite simply, the taste of freshly dried and crushed seeds from these two plants are a joy to behold. They cannot be further removed from the stuff you get in the supermarket which you know is at least two years old.
Coriander is a tricky plant to keep on top of, it soon goes ‘leggy’ so don’t worry, leave it!
This year I have grown Moroccan coriander and am looking forward to the results, they have flowered and now their seeds are slowly turning from the fresh green pod into the dried ball of amazement that will soon be gracing my curry pastes.
I know I have banged on about this kind of stuff before but it’s one instance where being ‘cheffy’ is actually appropriate and, more importantly. genuine.
