Cooking Padron Chillies for Tapas

How to Grow and Cook Padron Chillies….

One of my favourite tapas dishes during my recent visit to Spain was a dish of fried green chilli peppers. Simple and delicious I was determined to try and source some similar peppers when I returned to England.

Having read up on the chillies and the variety used I then discovered I was already growing some in my polytunnel! What luck!

The padron chilli originates (via Mexico) in Galicia, North West Spain. The old town of Padron first welcomed the arrival of the peppers back in the 18th century and following the first sunday in August the locals hod a month long celebration of this fine chilli.

The great thing about padron chillies is that most of them are really quite mild but every so often there is a little hottie in amongst them hence their title of ‘Russian Roulette Chilli’. As a tapas they are simplicity itself. Take a frying pan, add some olive oil and fry the peppers until the skin begins to scorch, drain them, arrange on a plate and drizzle with olive oil and a generous sprinkling of rock salt.

    I have returned to my comfort zone here at chez MC, having dipped into the ‘other channel’ which is never the best of ideas at this time of night for one with a sensitive nature :)

    Anyway the important thing is that my shipment of culinary/cosmetic raw ingredients have finally arrived….. so then (she says wearing her clinical hat) what key areas of head chefs hard working anatomy are problematic and what potion should we be aiming at? Do bear in mind this pharmacy’s limited equipment and basic knowledge wildly exotic tastes and skill :lol:

    …. painful shoulder, lower back, left arm and left thigh …… I was thinking along the lines of a lipbalm for the pro moisturizing male of our times :)

    My first consultation would strongly suggest you give up weights heavier than a can of beans and stick to yoga and long walks. The rest of the ailing body parts must be treated with oils of arnica and argan by a qualified masseuse. While we’re on the subject of argan, then it’s worth mentioning that this natural oil is used for cooking as well…. apparently it has lots of good qualities, enough for say, a post all on it’s own?

    I know a French woman that I could highly recommend for the neck and shoulder regions…. unfortunately she is an unknown quantity in the other regions :) Her lack of any qualifications whatsoever is more than made up by her general enthusiasm ….. still they say laughter is good for the soul :) We would arrive with spice grinders (not sure why but it seems like a good idea) mortar and pestle and pure organic raw ingredients … we like to work in the raw :) After some ground coffee we’ll assess the patient’s state of health and create a personalised blend which might still smell of coffee but we can assure you, will be a figment of your already ailing imagination… heat it all up in the cauldron and baste you with a large pastry brush. How does that sound? :lol: The bad news is that the best person I know in the manipulation game is a bloke who has a business not far from where I live…. not a lot of laughs but probably the safer bet if you want to walk again… :)
