Corned beef is great when done well too.

I followed a long and authentic recipe for Vietnamese Pho a while ago involving a complex stock full of meat and spices.

One of the cuts used was shin which was cooked in the stock for about 24 hours. You were supposed to shred it and add to the final dish (which took about another 12 hours or so) but I tasted a slice of it first. It tasted amazing, the spices were noticable throughout the whole thing.

There was none in the final dish....</description>

A good point, most of these old fashioned cuts are now going into mince because nobody is cooking it anymore, in some cases it's a pity but in others less so as far as I am concerned.

Most people have no idea where the cuts of meat come from on the animal.  We're much more savvy with fruit and veg... even flour these days but because I think we eat less meat and supermarkets don't go into much detail, we forget the basics.  I'm ok with the ox tail I bought recently though because it's from an ox and it's a tail... beyond that I sometimes have to refer to on old cook book.

I'm still playing with sourdough recipes, with mixed results I must say but ordinary bread recipes can have a ladle-full of ferment included so I've found out.
