I would point out that the list of ingredients should read 'light muscovado sugar' not butter, whoops! Needless to say the glaze is put on when the cake is cold, but you knew that... Cid p.s. don't forget to line that tin with greasey-proof paper. Key to the whole thing is beating the butter (unsalted to the purists) and sugar like mad, which is easy if you're built like Miles ... if on the other hand you're more of a Nigella then the electric mixer will do nicely! Instead I'm faced with a blob of malty tasting toffee, still never mind at least it's edible. I shall blitz it up in the blender and use it to top and side a gateau or perhaps in icecream ... if all else fails, it could end up as a sugar scrub :) After all my years of dabbling with cookery, I've never forked out for a sugar thermometer, this could be a crucial mistake.
