Cid’s Apple Cake

Step aside Nigella…..

Here is a recipe kindly donated by a regular contributor to this blog and Lincolnshire’s answer to Nigella Lawson; Cid!

Words and recipe by Ciderella (in partnership with Waitrose)

Cinnamon, Apple & Pecan Cake

150g butter cut into cubes and softened, 150g light brown muscavado butter, 150g self raising flour, 1tsp ground cinnamon, 3 eggs, beaten, 2 tbsp milk, 2 eating apples, such as cox’s, 100g pecan nuts, broken into pieces, 75g sultanas (I used dates) 1-2 tbsp amber sugar crystals (optional)

Oven 180c. Grease 18cm round loose-bottomed tin, line with baking parchment. Whisk softened butter with muscovado sugar until pale and fluffy (the mixture that is, not you!) Sieve flour and cinnamon into mix, add beaten eggs and beat together. Stir in milk. Peel and core apples, cut into quaters, in half again lenghtways, then slice widthways. Reserve a handful of apple pieces and stir the rest with pecans and sultanas/dates into the cake mix. Pour into tin and level surface, scatter the reserved apple pieces evenly over the top then sprinkle with the amber sugar crystals. Bake in a preheated oven for approx 1 hour or until cooked. Serve warm. I used a spoon of quince jelly to glaze and omitted the amber sugar.

    Thanks, I was delighted to see todays post and hope your readers will give it a go. Perhaps I should have coated the fruit and nuts in flour before incorporating because mine always seem to end up at the base.

    I eagerly await your post on the perfect tarte tatin.

    Being the old alchemist that I am, I thought I’d have a bash at recreating Maltesers in the same way Hokey Pokey is made … viewers may be interested to know I failed! Instead I’m faced with a blob of malty tasting toffee, still never mind at least it’s edible. I shall blitz it up in the blender and use it to top and side a gateau or perhaps in icecream … if all else fails, it could end up as a sugar scrub :)

    After all my years of dabbling with cookery, I’ve never forked out for a sugar thermometer, this could be a crucial mistake.

    Sweet manufacturers everywhere will rest easy tonight :)

    What we want to hear is that you’ve been able to follow the recipe - think how proud you’ll be when you present this autumnal wonder to family and friends for tiffin! I would point out that the list of ingredients should read ‘light muscovado sugar’ not butter, whoops! Needless to say the glaze is put on when the cake is cold, but you knew that…

    p.s. don’t forget to line that tin with greasey-proof paper. Key to the whole thing is beating the butter (unsalted to the purists) and sugar like mad, which is easy if you’re built like Miles … if on the other hand you’re more of a Nigella then the electric mixer will do nicely!

    No expensive diet, it is all grown in the estate grounds. I believe there are staff to monitor and maintain the quality of the produce.
