Chocolate and Bananas

A play on a classic

Fabien, my pastry chef from Normandy came up with this new dessert which I thought I would share with you. It’s basically a play on chocolate and bananas with a bit of a twist for good measure.

The dessert is a tart made with Valrhona chocolate and caramelised bananas, this is topped with a piece of banana filled with coconut liquer syrup and a ‘cigarette’ of dark and white chocolate. The plate is decorated with piped chocolate and the ‘piece de resistance’ three chocolate truffles filled with coconut sorbet and rolled in dessicated coconut. The dessert is a triumph in textures and tastes and I am delighted in what he has managed to achieve.

Fabien has spent his working life in French pastry shops and this is his first position in a restaurant where the pastry section is much different in so much that it is a plated service where extra garnishes and asthetic considerations are so important. For him to come up with this already deserves praise from me and I’m happy to give it.

As the English say, the boy done good………

    Chocolate truffles filled with coconut sorbet? Rolled in desiccated coconut? I am a coconut addict. Oh my gosh, heaven on a plate! Where is your restaurant? I’ll be right over.

    They do taste great, they are set at just the right temperature so that after the initial crunch the sorbet turns to liquid.

    Your fine eating establishment must be an Aladdin’s cave of culinary delight and a great place to work and learn.

    I now feel that my life will not be complete until I’ve sampled one of Fabien’s truffles and a liqueur filled banana, the method of which is probably a state secret!

    I am certain this dessert will be a roaring success on the menu.
