Cheese Fondue in Switzerland
When in Rome……
I enjoyed a very nice cheese fondue at one of the oldest restaurants in the Vaud region of Chateau d’Oex in Switzerland recently. A proper Swiss fondue, this one flavoured with beautiful fresh morel mushrooms it was served with hot boiled potatoes and plenty of thick, crusty bread.
The chef told me how he makes his fondue, a simple roux of flour and butter, seasoned milk, plenty of cheese, a little mustard and additional flavourings depending on the style of the fondue. The fondue is served in a pot set over a small heater with a fork to dip your bread into and stir into the mix.
It might not be the healthiest meal you’ll ever eat but on a cold winter’s day in a snow covered Swiss village there isn’t much to beat it…..

Entertaining with fondues some years ago was all the rage in Germany. Coyping the Swiss idea there were sets of fondue pots both electrical and basic to be seen everywhere.
I resisted the temptation to buy one because I felt that these things are best to be used and experienced in their own countries.
I guess in a way it is a bit like wonderful italian dishes. However much we try, our ingredients are not the same and the whole ambience is missing. But how wonderful to be able to experience the original

I had one of the most memorable meals of my life in Wengen, eating cheese fondue and drinking the finest wine I’ve ever tasted. The wine was from a small vineyard somewhere in Switzerland. I thought I would never forget the name and now it escapes me. The wine, the cheese, the ambiance — sharing it with my special friends was a highlight of my life. Thank you for reminding me of that night.
