About Me
Welcome to milescollins.com a meandering journey 
through the world of food, photography, nature and travel. I have worked as a chef in the UK and mainland Europe for over twenty five years and this blog is, in part an account of what I have learnt about food and food culture along the way. There are thousands of food blogs out there but precious few from professional ‘working’ chefs and this site aims to give an insight into the life of a chef including recipes, stories and thoughts on food related topics from a chef’s perspective.
Food is a multi faceted subject and it is through my desire to better understand the world’s great cusiines that my love of travel and photography developed. Photography has encouraged me to explore new avenues of interest such as nature and our natural food larder and examples of my work can be found by visiting my photographic portfolio here.
Music and books are an essential in my life and among my favourite authors are; John Le Carre, Christopher Andrew, Spike Milligan, Graham Greene, Elizabeth David and Simon Hopkinson. Musical tastes are rooted in rock, blues and jazz particularly; Led Zeppelin, Chris Rea, John McLaughlin, Miles Davis, BB King, early George Benson to Thin Lizzy, Free and Motorhead. So given that mixed bag you can expect an eclectic mix of posts which I hope you find of interest and encourage you to participate in commenting on.

For anyone interested in how I got to where I am today, which isn’t particularly far or what a chef’s life is really like you can find it all in a series of ‘warts and all’ autobiographical posts starting in the mid 1980’s as a trainee in England.
