A Recipe for Gooseberry Curd
A recipe from Lincolnshire’s answer to Elizabeth David….
Upon my return for another busy dinner service on thursday a waitress passed me a bag containing a jar of homemade gooseberry curd, elegantly decorated with ribbons and a beautifully written label sent by this blog’s longest and most frequent commentator, the lovely Cid.
This has been a particularly stressful time and to receive this was a real ‘pick me-up’. It reminded me about the fundamental importance of cookery which is to cook, enjoy and share with others. So in the spirit of good food Cid has very kindly offered to share her recipe on this blog. If you live in a country where gooseberries are freely avaliable then give it a go.

Cid’s Recipe for Gooseberry Curd:
350g unrefined caster or granulated sugar
675g gooseberries
300ml water
110g unsalted butter cut into small pieces
3 large free range eggs beaten
a little grated lemon zest
a tablespoon of elderflower cordial
2 suitable jars for bottling
“Heat the water and gooseberries until the fruit is soft then push through a sieve into a heat proof bowl, discard the pips etc. Add all of the other ingredients and set the bowl over a pan of gently steaming water. Whisk until the sugar melts and the mixture thickens into a ‘custard’. Pour into sterilized jars, top with a circle of grease proof paper and lid. Store in the fridge and eat within a week or so. It’s nice stirred into natural Greek yoghurt or as the filling for baked curd tarts”

Today some friends of mine turned up out of the blue and brought me a little gift and the promise of some home made lime pickle when it matures….. Miles is right, it’s the sharing with others that brings real joy.

p.s. by the way Miles’s place of work is indeed a glamorous establishment… it says ‘no riff-raff or mad women’ above the door…. I had to slip in through the laundry shoot

I’ve had several studies in mud taken over the years and highly recommend it
