I'll have to pass on the cous cous, but the rest of this sounds so interesting. Chorizo and squid? I rarely ever buy fish, other than some wild-caught salmon on occasion. I need to branch out and try something new. I might have to give this a try and substitute something for the cous cous. Quinoa, maybe?

I've bookmarked a sustainable seafood recipe site from Monterey Bay Aquarium. I haven't tried any of the recipes yet, but I'm always interested in which fish are sustainable and which aren't. Here's the link if you're interested. It's a fairly new feature on the website, highlighting exec chefs from top US restaurants.

that's superb. I think this is really helpful, a dish that anybody would be proud to serve but also one that anybody could do - whatever their level of confidence (I believe a lot of cooking or the lack of it is down to confidence rather than capability)

I might get some squid tubes - not heard of them before
