A Curry Recipe for the Single Man

How to make vegetarian curry in a hurry

This is for bachelors everywhere! Men like curry (I’m sure women do but as I am not one I cannot presume) in any guise and this one is for ‘us blokes’ who don’t want to roast a whole free range chicken for ourselves.

Sweet potatoes and broccoli are great energy boosting foods for the active man or woman, they are tasty, cheap and great in a curry. Making curry is a personal thing, there are many types and everyone has there own favourite ingredient. I like to use mustard seeds in vegetable curries for example but not everyone is going to have these so leave them out.

In the interest of scientific research I timed how long it took to make this simple curry from start to finish, the idea being that if it took longer than thirty minutes I wouldn’t bother writing about it. 

Sweet Potato and Broccoli Curry Recipe

Take a head of Broccoli and cut them into florets, peel a large sweet potato and cut into bite size pieces, peel two onions, a clove of garlic and a piece of ginger. Check the cooking instructions of your favoured rice, mine is brown basmati which requires longer cooking.

Fry the onions in vegetable oil on a medium heat until brown, boil water to cook the broccoli in. Now make the dry masala; (if you’re a ready made curry paste type then skip this bit) bash together 1 tsp each of cardomom pods, fenugreek seeds, peppercorns, coriander and cumin seeds. When crushed to a fine powder stir in a teaspoon of ground turmeric and a pinch of salt.

Add the chopped garlic and ginger to the pan of onions, if you’ve got some dried curry leaves then throw three or four of those in too. Add a couple of chopped fresh chillies depending on how hot you like it. Stir in the spice mix and lower the heat. Boil the kettle.

Add the potatoes after a couple of minutes followed by a 400g tin of chopped tomatoes. Crumble half a stock cube into the empty tin and fill with the hot water, stir. Note: the tin with boiling water inside will be hot :) Stir the tomatoes through the potatoes and top with the stock. Raise the heat to medium, keep an eye on the rice and then cook the broccoli.

After ten minutes add the juice of half a fresh lime and plenty of chopped fresh coriander, taste. As the potatoes cook it will absorb the liquid so add more hot stock or water as required. When the potatoes are cooked fold in the cooked broccoli.

Drain cooked rice and serve the curry. Total preperation and cooking time including photos and washing up; 27 minutes.

    Talk about fast food - it shows there is no excuse - it would take longer to go to a takeaway than to prepare.

    I’m also impressed at the realistic use of ingredients.
    You’ve obviously tailored the recipe to the ‘average single guy’ something nobody else seems to do.

    Also very cheap to make - saving money and eating better - why would anybody not try this ?

    Being a female and slightly milder, I shall keep the amount of chillies to medium :)
